Dried tomatoes in oil
In the fertile plains of the Nestos River Delta, we cultivate tomatoes of the San Marzano variety in open fields. Tomatoes are picked by hand during the summer months, washed, carefully sorted, cut, slightly salted and then kept at the dryer for 30 hours until they lose nearly 70% of their original weight.
The dried tomatoes before getting into the jar with the oil, are slightly soaked in water with salt and vinegar to get softer. A simple recipe based on garlic and herbs of the Greek land, highlights the unique taste of dried tomatoes.
Dried tomato in oil is considered as a star ingredient in the Mediterranean Diet. It is a unique meze that can be served as an appetizer on every table along with olives and crackers. It is also one of the main ingredients of the green salad while it can be added to any classic recipe and provide an extra tomato flavor.
